Caesar Dressing

Ingredients

  • 6 egg yolks
  • 8 anchovy fillets
  • 4 cloves garlic
  • 2 oz. Dijon mustard
  • 2 oz. red wine vinegar
  • 1 oz. Worcestershire sauce
  • 1 pt. + 1 cup canola oil
  • 1# Parmesan cheese
  • 2 ea. lemons, juiced
  • salt & black pepper to taste

Directions

  1. In food processor, add yolks, anchovies, garlic, mustard, vinegar and blend well and slowly emulsify with oil. Thin with warm water if necessary.
  2. Finish with Parmesan cheese, lemon juice, and season to taste.
