This sweet potato version was developed as a gluten-free alternative to the classic. This is not your Italian nonna’s gnocchi recipe, but we bet she’d approve.

How they do it: Sweet potatoes are coated with extra virgin olive oil then oven roasted and caramelized before being formed into gnocchi. Their autumn red-orange colors complement an array of entrees.
