Balsamic Peach Caprese

Summer on a plate! This dish is so easy it really doesn’t need a recipe! The key is to select the very best ingredients. Look for “Fresh Mozzarella” — it is typically packaged in water and is much softer than prepared mozzarella. Select vine-ripened tomatoes and fresh summer peaches and the best quality balsamic vinegar you can find.

3 peaches, cut into thick slices

3 tomatoes, sliced thick

6 oz. fresh mozzarella, sliced (or torn)

Fresh basil, torn into bite size pieces

Olive oil

Balsamic vinegar

Sea salt

Fresh ground pepper


  1. Arrange peaches, tomatoes and mozzarella slices on a platter or individual plates.
  2. Add basil and drizzle with olive oil and balsamic vinegar.
  3. Salt and pepper to taste.
