Until the ice cream truck drivers get wise and start packing popsicles for adults, here’s an option for you. R&R Chef Jennifer King brings you this oh-so-refreshing treat that’s easier than you might think to make! Enjoy.
4 cups chopped peaches
2 Tbsp. fresh lemon juice
1/4 cup honey
3 1/2 Tbsp. Bourbon Whiskey
- Peel peaches and cut into chunks discarding the pits. Place peaches into a blender. Add the fresh lemon juice, honey and bourbon and puree leaving a few chunks.
- Pour the mixture into the popsicle molds. Freeze for 30 minutes, then insert sticks. Continue to freeze until firm, at least 5-6 hours.
- To un-mold, run hot water over the outside of the popsicle molds for a few seconds,
then gently remove.
